American Wild Ale
Forest represents the unseen but unique attributes of The Uplands in Southern Indiana. For this spontaneously-fermented ale we collected microflora in remote, natural spots in Morgan & Monroe County. Every place has a distinct identity, a distinct makeup, and a distinct combination of microflora. This is ours. After fermentation, we transferred the ale to oak barrels to age for over 18 months. With notes of apple & dry cider, Forest pairs well with persimmon pudding or mulberry pie. It’s age-worthy, too, so pick up a few to store away.
ABV: 5%
IBU: 5
YEAST: Wild Microflora
MALT: Pale Ale Malt
HOPS: Aged German Spalt
